An ode to nostalgic British fare – this veggie Toad In The Hole can be enjoyed by everyone!
Ingredients
1 onion cut into thin wedges
2 tbsp olive oil
Batter
1 cup of milk
250g plain flour
5 eggs
Method: Start 1-2 hours prior to eating.
- Batter: In a large bowl combine the flour and salt and make a well in the centre. Beat the eggs and milk together in a separate bowl, and then slowly add to the flour mixture, whisking until smooth. Chill in the fridge for 1-2 hours.
- Once the batter is chilled, grease an oven dish and preheat oven to 220° Celcius fan bake. Place the greased oven dish in the oven to get as hot as possible.
- Add oil to a skillet on medium heat and cook sausages until golden. Remove sausages from the pan and saute the onion wedges lightly – about 5 minutes.
- Once the oven dish has been heated, remove from oven, add Bean Supreme Sausages to the dish, and pour the batter around and on top. Dot the onion wedges throughout and place in the oven.
- Bake for 10 minutes and then turn the heat down to 180° Celcius. Bake for another 25 minutes or until golden and ‘springy’ to the touch.
- Serve immediately with vegetables or we like to accompany with any of our LISA’s Hummus and Dips.
